California believes that everything can be cured by Yoga and Avocado.  We do know that Avocado is one of the most nutritious foods on the Planet, and now are included in many diets because of their health giving benefits.    So if we are to believe half of what we hear, then here are some simple and healthy snacks with Avocado as a leading player.

Kick the day off with eggs and avocado on granary toast.

INGREDIENTS

2 hard boiled eggs

2 ripe avocados

1 tablespoon of sweet mango chutney

2 slices of granary toast

METHOD

Slice the eggs

Smash the avocados

Pile the eggs and avocado onto the toast

Garnish with the chutney

Serves 2

HINT –  why not try with a poached egg

 

Light Lunch or Supper with sliced Avocado and quinoa in a bowl.

INGREDIENTS

2 ripe Avocado

2 cups Quinoa

Half a cucumber

Six sprigs of rocket

2 red peppers

2 spring onions

6 ripe vine tomatoes

METHOD

Slice the avocado

Chop the peppers, cucumber. tomatoes and spring onions

Place avocado and quinoa into bowl garnished with rocket, chopped Spring Onion, tomatoes, cucumber and red peppers

Garnish with sprigs of rocket

Serve with soy sauce or balsamic vinegar dressing.

Serves 2

HINT – Why not add a few pine nuts for added crunch
