Double Tomato & Double Cheese Bruschetta – A Luscious Lunch or Late Night Snack

Here is a quick and easy recipe filled with flavour which only takes minutes to achieve.  If you are struggling for time and still want to come up with an appetising alternative to cheese on toast as a comfort food – this really does tick all the boxes.

 

Double Tomato & Double Cheese Bruschetta

INGREDIENTS

6 Plum Tomatoes, (canned or fresh), Chopped

½ cup sun-dried tomatoes in oil

2 cloves garlic, finely chopped

3 tablespoons Olive Oil

2 tablespoons Balsamic Vinegar

¼ cup Fresh Basil leaves, stems removed, finely chopped

¼ teaspoon salt

¼ tablespoon ground black pepper

1 French Baguette

1 ½ cups Mozzarella cheese, grated

½ cup strong cheddar, grated

 

 

METHOD

Preheat grill on moderate heat

In large bowl combine plum tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt and pepper Allow the mixture to rest for 15 minutes whilst preparing the baguette

Cut baguette into ¾ inch slices, arrange on backing sheet, grill until slightly brown

Turn slices over, divide the tomato mixture on the slices

Top with the Mozzarella and Cheddar cheese mixture

Grill until cheese has melted and slightly browned

Can be eaten straight away whilst hot or as a cold snack

INGREDIENTS Serves :4

4 x Chicken Breasts
2 x Gloves Garlic (peeled but left whole)
1 x Jar Mushroom Sauce (500g)
250g Button Mushrooms, Halved
100g Spinach, chopped
250ml of water or for extra special treat substitute for 250ml of white wine.

We sometimes add a few slices of lean bacon, chopped

 

METHOD

Prep time 5 min – Cook 10 hr

1) Place all ingredients into slow cooker, cover with lid and cook on LOW for 10 Hours
