Beef Olives – A FAB Retro Recall

Beef Olives – A FAB Retro Recall

BEEF OLIVES are a real comfort food according to Jamie Oliver.  They were also a favourite decades ago with Sylvia Anderson, creator of Lady Penelope and Thunderbirds, according to her daughter Dee.

Sylvia was a dab hand in the kitchen when she was not creating her latest storyline or character, and Beef Olives was one of her specialities.

‘In those days’ Dee recalls, ‘it was quite unique as lamb chops or roasts were more standard in home cooking, but Sylvia, always the innovator, even pushed the boundaries of cooking and creativity.  It sounds tame these days as the entire Nation is au fait with international cuisine, but back then it was quite a rarity’, and to Dee’s school friends it was deemed as quite ‘out there’.

BEEF OLIVES

Ingredients

400g of lean finely cut beef

1 tablespoon of Dijon mustard

1 medium onion

220g celery

150g carrot

250ml red wine

600ml beef stock

1 Leek

For the Stuffing

1 small onion

3 rashers of smoked bacon

4 mushrooms

A pinch of thyme

1 clove of garlic

1 tablespoon of olive oil

Method

Preheat the oven to 180C. Fry the onions, garlic, mushrooms until soft. Add to the raw bacon and set aside.

Place the beef on a flat surface and beat with a rolling pin or food hammer until very thin (approx. 1cm thick). Spread each beef slice with the mustard. Fill with the prepared stuffing.

Cut the leek in half and blanche for 30 seconds in boiling water place into cold water so that the leek is stringy. Cut the leek in thin strips long ways.

Roll the beef slices over the stuffing and use the leek strings to secure the beef. Fry the beef on all sides until brown and place in an oven proof dish.

Fry the remaining onion, carrot and celery in a pan for 5 minutes. Add red wine and beef stock and stir. Pour over the beef olives and cook in the oven with a lid on for 3 hours.

Remove the beef olives from the dish and keep warm. Blend the remaining sauce until no lumps remain. Serve with root vegetables and mashed potatoes.

IS BORING THE NEW SEXY – WHAT QUALIFIES AS COOL?

IS BORING THE NEW SEXY – WHAT QUALIFIES AS COOL?

In my teenage crush dating years, we all rallied against what our parents had in mind for us.  A budding accountant, medic or law student who has a ‘profession’ was what they imagined for us, and instead we would go for the ‘bad’ boys, the bikers, musicians and in the case of one of my class mates, a local bouncer.  Most of us wouldn’t want to be seen dead with anything less than ‘cool’ as we hung out at the local café or meeting place.

A good example is the iconic film Dirty Dancing when middle class daughter of a doctor meets holiday entertainer and falls in love.  We see her being pursued by less than enigmatic son of the hotel owner in the beginning, only to become beguiled by the ‘bad boy’.  It all works out in the end as the ‘bad boy’ actually turns out to be the one they can trust, so her blinkered father, (who would have preferred the ‘untrustworthy’ graduate from Harvard), comes round in the end.

It does seem scary that we had to tread the path of ‘dangerous’ so that our kids could find the way.  I remember taking illicit motorbike rides with my best friend’s elder brother – on his brand new motorbike, without a crash helmet or even a hat!  Way before health and safety or even sensibility kicked in, and being reported by a local gossip to my mum.  She very cleverly didn’t tell me for years as she knew it would encourage me to do it more.  But I would be horrified if I witness my daughter doing the same thing.

The first time I realised that things were turning around was when my teenage daughter came home with a very respectable law student, and we all silently heaved a sigh of relief as I was expecting a return of my own youth when my first ‘boyfriend’ was a pickup in a local music festival sporting a guitar and a plethora of tattoos.   I didn’t mention this to her of course, as she would have been horrified at her mother’s misspent youth, but it did get me thinking.

Perhaps it is the influence of my good parenting, or the recent success of Suits and introduction of Meghan into our Royal clan, or the inclusion of ‘sensible’ into our most controversial TV programmes, but something has changed and hopefully for the better.

My daughter now spends hours on the phone to her boyfriend discussing legal disputes and solutions, and is now wanting to become a lawyer herself!

Even with the dreaded Love Island which the kids insist on watching, their star Doctor is now being given the opportunity to appear on Breakfast TV having revealed all on the beach, and I don’t just mean his fake tan.

But is this something we should welcome with open arms, or are you like me from the era when the protagonist was the penniless but heroic champion?  Maybe we should save that for our own bygone fantasies, or if we see our offspring following in our footsteps, remind them as well as ourselves, that ‘Boring’ is definitely becoming the new Sexy.

THE OVER WEIGHT IS EXCESS – DON’T PAY THE PRICE

THE OVER WEIGHT IS EXCESS – DON’T PAY THE PRICE

As my old science teacher would say, the only way you will succeed is by using the three P’s – which are perseverance, patience and for the life of me I can’t think of the third.  In fact, all have thought about when trying to lose weight in the past is just one P, and that I am not able to publish, but to give you a clue, is also a word used when drunk!

In the past year, several of us at Glotime.tv have been under the watchful eye of Gudrun Jonsson, a revered Kensington based bio-path, who has monitored our diets and put us on an organic regime to regulate the gut and get the system working again.  This has resulted in a massive weight loss of several hundred pounds between us, and we now have the challenge of sustaining the weight loss.

It is true that successful weight loss is more than a few visits to weight watchers or slimming world, but for the more committed it is a complete life change in diet and exercise.

It sounds challenging and it is, but if you really want to change your shape and improve your health, it is well worth the investment.

I would strongly recommend that you sign up to a recommended nutritionist like Gudrun, but if you can’t make the trip to London, then there will be many in your area, but make sure you read the reviews and try to access one who has some sort of medical experience or knowledge.

Once the digestive system has been accessed, and you have a diet plan in place, you will begin to see the difference immediately as we did, and the pounds will start to drop away.  We gain weight when there is too much acid in the blood, which can be due to all sorts of factors but stems from the central area of the body, the gut.  So once that is sorted, the rest will follow.

It is true that exercise accelerates weight loss, but it is 80 percent diet, and a brisk walk every day or a visit to a yoga class or the gym two or three times a week are sufficient to support your regime.

My diet needed a bit of tweaking but was not drastic, and I was able to add some really tasty foods like avocado and quinoa, pomegranate and papaya as well as rye bread and tahini.

You will also be pleased to hear that you can drink alcohol, in moderation, one or two units a day will not affect your diet – preferably with your lunch or dinner – although I elected to sustain from alcohol completely for the first couple of months when I was kick starting my system.

Once you have lost the weight, and you definitely will, the challenge is to keep it off.  We have been advised to watch our food combinations – do you remember the old Atkins diet.  Well there you have it, and if you stick to not eating carbs with protein, the weight loss will sustain or even increase.
